It's summer and one of the last things anyone wants to do is turn on an oven. That's why my black cherry tapenade recipe is the absolutely perfect recipe to make for a summer gathering, barbecue or just a light snack.

I chose to leave the olives whole instead of pulverizing them with a food processor. The black cherry tapenade recipe keeps the olives in tact.

Black Cherry Tapenade

Ingredients

1/2 cup Fresh Black Cherries, pitted and quartered

1/3 cup Spanish Queen Whole Olives with Pimento, quartered and diced

1/4 cup Kalamata Olives, quartered and diced

1 - 2 tbsp. Kapers

1 tsp. Garlic, minced

1 small Shallot, sliced thinly

1 - 3 tbsp. Fresh Parsley

1/4 tsp. Salt

1/2 tsp. Red Pepper Flakes

1/2 tsp. Chili Powder

1/4 cup Extra Virgin Olive Oil

2 tbsp. Red Wine Vinegar


Optional: Bread, Crackers, or Peta Bread for dipping


Directions

1) Chop the cherries, olives, shallot and parsley:

  • if your cherries are pitted, cut them into quarters and set aside. If they are not pitted, carefully drag the knife around the pit making four quarters and remove the pit from flesh.

  • For the Spanish and kalamata olives, quarter half of them and then slice the other half.

  • Finely chop the fresh parsley.

  • Finely slice shallot.

2) Mix together the black cherry tapenade: to a serving bowl or dish combine all the ingredients and stir together with a fork.

3) Serve black cherry tapenade: serve black cherry tapenade with fresh cut bread, pita bread or crackers.

Black Cherry Tapenade Recipe Tips & Tricks


If you don't like black cherries: you can use fresh pomegranate for the burst of fruit. Or if you hate fruit and are looking for a simple olive tapenade, use this recipe without the cherries.


Make ahead: you can make this dip up to two days in advance and store in a tight container in the refrigerator.
