Directions for Apple Crumb Muffins

  1. Cook the apples: peel and dice apples into 1/4 - 1/2 inch cubes. Place apples into a small sauce pan and add 1/2 cup brown sugar, salt, cinnamon and nutmeg. Stir and let cook on medium for 15 minutes, apples will be slightly soft but not mushing, sugar should be dissolved.

  2. Make the apple crumb muffin batter: in a medium bowl add softened butter, sugar and eggs. Whisk until butter is creamed, light and fluffy, about 3 minutes. In a small bowl combine flour, baking powder and salt. Add dry bowl to wet bowl, toss to combine slightly before adding the milk and sour cream. The dough will be tough to mix at first but will come together. Preheat oven to 425 and set batter aside.

  3. Prepare crumbs: dice the cold butter into 1/4 1/2 inch pieces and add to the same bowl you had the dry ingredients in, add flour and toss with fork or your fingers. You want to work each piece of butter into the flour so it gets coated. Place bowl in the freezer, you want the crumbs to stay as cold as possible.

  4. Combine apples: remove apples from the heat and set aside for 10 minutes. This will let the batter rest, as we want the baking powder to activate before adding apples, as well as cool the mixture. Once cooled, measure one cup of the cooked apples into the muffin batter, fold to combine. Place the remaining cooked apples into butter bowl, mix to combine.

  5. Scoop apple crumb muffin batter: place cupcake liners into muffin pan, making sure to stager them, skip one muffin in between so they can spread properly. Scoop about 2.5 ounces of batter and 1 ounce of crumb on top of the muffin.

  6. Bake apple crumb muffins: bake muffins at 425 for 15 minutes, the high heat allows muffins to rise. Reduce heat to 350 after 15 minutes and bakes for another 15-20 minutes.
