Autumn Salad Recipe

While we mourn the loss of the summer sunlight, we can rejoice in the fact that autumn is entirely new season to inspire new recipes. My Autumn Salad Recipe is perfect to celebrate this new crisp season. The Autumn Salad is delicious and crisp, but best of all, very easy to put together. The Autumn Salad has a wonderful orange and white balsamic vinaigrette. Layered on a bed of arugula and spinach, the goat cheese and dried cranberries make for wonderful fall recipe. Make the Autumn Salad for friends over a warm meal.

Autumn Salad Recipe

Serves: 3 - 6 people

Prep Time: 25 minutes

Active Time: 15 minutes

Ingredients


12 - 16 oz. Spring Mix Salad

3 - 5 oz. Plain Goat Cheese

1/2 cup Pecans, toasted and chopped

1/3 cup Dried Cranberries

1/4 cup Red Onion, sliced


Autumn Salad Dressing:


1 Orange, juiced

1/4 cup Extra Virgin Olive Oil

2 - 3 tbsp. White Balsamic (Substitute with Apple Cider Vinegar if you do not have)

1/2 tsp. Salt & Pepper

1 tsp. Red Pepper Flakes

Directions

1) Toast the pecans: on a baking sheet lined with tinfoil, pour the pecans onto the sheet and bake at 200 degrees for 10-15 minutes. The pecans will be fragrant and slightly darker. Set aside to cool before chopping.

2) Make Autumn Salad dressing: in a glass measuring cup, add the juice of one orange, extra virgin olive oil and white balsamic. With a hand held immersion blender, pulse the dressing together. Dressing will lighten in color and then stir in salt, pepper, and red pepper flakes. If you don't have a hand held immersion blender you can use a regular blender, Nutribullet or just stir the dressing by hand (it will separate more quickly, so make sure to mix before adding to salad).

3) Chop Autumn Salad ingredients: chop toasted pecans and set aside. Slice red onion in 1/2 inch strips. Break up the goat cheese into crumbles.

4) Assemble Autumn Salad: in a large bowl add the spring mix, crumble goat cheese and spread over top. Then toss in the pecans, dried cranberries and red onions. Dress before serving.
