Why I made the Strawberry, Burrata, Balsamic Summer Salad
I am a huge proponent of fruit in salads. I think a sweet or sour burst of fruit is the best way to pull together a bright dish. This salad brought me a bit of summer sunshine, even if the sun stills sets at 5:30 pm.
I actually worked for a catering company that had a Summer Salad which used mozzarella, pecans with a raspberry vinaigrette. While I love the flavors of that salad, I wasn't sure if the texture of the burrata would lend well to pecans. Although, feel free to add either candied or roasted pecans to give the salad a bit more of a crunch.
Instead I wanted the Strawberry, Burrata, Balsamic Summer Salad to be bit a more Italian inspired. With a clean acidic balsamic vinaigrette with burst of lemon zest and juice. This acidity lends well to the creamy cheese and sweet strawberries. To fill in for that crunch, I used sliced red onion.

Ingredients

Strawberry, Burrata, Balsamic Summer Salad Recipe
4 cups of Baby Spinach, chopped
1 cup of Strawberries, quartered
1 - 4oz. Ball of Burrata Cheese
1/4 of a Red Onion, sliced finely
1 tsp. Crushed Red Pepper Flakes
The Dressing
1/4 cup of Balsamic Vinegar
2 tbsp. Extra Virgin Olive Oil
1/2 tsp. Salt and Pepper
Zest of 1 Lemon
Juice from 1/2 a Lemon
Method
1) Chop baby spinach and place in a round shallow dish, this allows for you to build the salad without having to toss it.
2) Break the ball of burrata over the the spinach, making sure the pieces are small. Slice a quarter of the red onion into thin slices and spread over the spinach and burrata. Next cut the strawberries in quarters, making sure to remove the stems. Spread strawberries over salad.
3) Sprinkle red pepper flakes over salad.
4) Make the dressing. Before slicing the lemon, make sure to zest the rind and put the zest into the salad dressing container. To the same container, add balsamic vinegar, extra virgin olive oil, salt, pepper and lemon juice. Dressing should be acidic but still tasty, if the lemon is overpowering add a bit more salt or olive oil. If you want it more acidic, feel free to add more juice!
5) Assembly, make sure to shake dressing before pouring over the salad. Serve immediately.
Tips and Variations
The Lettuce: if you don't have baby spinach or don't like it, replace the base with romaine, or even arugula.
The Cheese: if you want something a bit more cost effective, you can use mozzarella, it is a perfect alternative. If you want to give the salad a mediterranean twist, you can also use Feta Cheese!
The Dressing: if you pressed for time, you can use a simple balsamic glaze and juice half the lemon over the salad.
Tip: The salad can be made ahead and stored in the fridge, make sure to shake or stir dressing before pouring over the salad.
Recipe Wrap Up
I believe firmly that fruit belong in salads. It a great way to brighten up a dish and add a sweet acidic flavor that pairs well with vinaigrettes. The Strawberry, Burrata, Balsamic Summer Salad is a great way to add a bit of warmth to your winter day.
