How To Host: Charred Chive Chimichurri

My charred chive chimichurri sauce is perfect for grilling. This charred chive chimichurri sauce is started on the grill to gain a deep unique grill char that brings out the bold flavors of the chimihcurri sauce. The charred chive chimichurri is perfect for summer and grilling season, with fresh grilled chives, onion and jalapeño to give it a spicy kick. The grill give the charred chimichurri a new edge of heat that will surprise your dinner party. The charred chive chimichurri sauce comes together quickly, with fresh herbs and garlic. Make the charred chive chimichurri sauce to enhance any grilled dinner, perfect for meat, fish and vegetables.

Charred Chive Chimichurri Ingredients


2 large bunches of Chives, (3 - 6 ounces)

1 Red Onion 

2 Jalapenos 

2 - 4 cloves of Garlic 

½ - 1 cup Olive Oil 

2 Limes 

¼ -½ Distilled White Vinegar

2 - 4 tsp. Salt


Method for Charred Chive Chimichurri


  1. Preheat a propane grill on medium heat for five minutes. 

  2. Cut red onions in half. Cut jalapeños in half and remove seeds if you do not like spice. Bring red onion, jalapeños and chives to the grill. 

  3. Place red onion and jalapeños skin side down to start. Gently lift the chives and place them perpendicular to the grill top so they do not fall in. Let chives char slightly, continuing to toss so no pieces burn, lower burning if cooking is happening too quickly. Grill chives for 2-4 minutes, letting some char and wilt before moving them off the grates. Flip jalapeno and red onion and grill for another three minutes, remove when there are grill marks. 

  4. In a blender add the charred chives, red onion, jalapeno, garlic cloves and blend for ten seconds. Add ½ cup of olive oil, juice of 2 limes, ¼ cup of distilled white vinegar as well as 2 tsp of salt. Blend until creamy, if you are having trouble blending until smooth, add more olive oil. Taste and adjust, if too spicy add salt and more distilled white vinegar. If it is still thick, add more olive oil.
