How To Host: Banana Cream Tiramisu Trifle

When I think of a trifle, my mind immediately goes to Rachel Greene, from the Thanksgiving Friends episode. "Lady fingers, a layer of cream. Which I made myself. Then a layer of sautéed peas and onion, another layer of cream and banana's." This trifle however, is a luxurious, delicious dessert that no one would pretend to choke down.
My Banana Cream Tiramisu Trifle is perfect for banana and coffee lovers alike. This Banana Cream Tiramisu Trifle is layered with espresso infused pastry for coffee lovers. The banana cream tiramisu trifle also layers fresh banana between spiced whipped cream. Make the banana cream tiramisu trifle for the banana latte lovers in your life. The banana cream tiramisu trifle is layered dessert made in my home kitchen, to yours, lady fingers layered between espresso pastry cream, fresh bananas and spiced whipped cream.

Ingredients for Banana Cream Tiramisu Trifle
24 Lady Fingers
1 cup Black Coffee
4 ripe Bananas
2 tbsp. Chocolate Powder (for topping)
Banana Cream
4 large egg yolks
¾ cup whole milk
1/4 cup brown sugar
1 tbsp. Instant Espresso
1 tbsp. Cornstarch
1 tsp. Vanilla Extract
½ tsp. Salt
16 oz. Mascarpone Cheese
Spiced Whipped Cream
1 ½ cups Heavy Cream
¼ cup Sugar
1 tsp. Cinnamon
½ tsp. Salt
¼ tsp. Nutmeg

Method for Banana Cream Tiramisu Trifle
Set a small pot of water on the stove, filled about two inches with water on medium low heat. While pot is coming to a simmer, grab an aluminum or steel bowl that is wide enough to sit over the pot without sinking in to touch the water. In the bowl combine egg yolks, whole milk, brown sugar, instant espresso, cornstarch, salt and vanilla. Whisk to combine, before brining bowl over to heat.
Before setting bow overheat, set up ice bath. You will need a bowl larger then the one with the pastry cream, fill with a cup of ice and a cup of water. Have this set up on the counter before you put the milk mixture over heat. Once ready, place milk bowl over heat and whisk continuously until it starts to thicken. It will be foamy and loose at first and you will start to think its not going to work, but keep whisking. It thicken quickly, 3-5 minutes. As soon as the whisks starts to leave behind marks and the cream can hold shape for a few second, remove from the heat.
Immediately place the bowl in the ice bath, whisking the mixture to cool rapidly. Avoid getting water into the pastry cream. Let bowl cool for three minutes before removing from water. Dump water out of bowl and add the mascarpone cheese. With a hand mixer whip the mascarpone cheese for one minute before adding the pastry cream and mixing to combine. The mixture should be light brown and airy in texture. Place bowl in refrigerator when fully mixed.
Whipped cream, in another medium bowl or stand mixer, add heavy cream, sugar, salt, vanilla, cinnamon and nutmeg. Whip cream for 3-5 minutes until peaks are stiff. Place bowl in refrigerator when fully mixed.
Brew your coffee in your preferred method, is using espresso you will need 6-8 shots. Pour coffee in shallow dish or bowl to prepare for dipping.
Prepare for layering, in a trifle or deep serving dish start with a layer of coffee soaked lady fingers. Gently roll lady fingers in coffee for 3-5 seconds, longer and they will get soggy and fall apart, and place them on the bottom of the pan. Remember to be strategic about layering, my trifle had four layers but you can do less or more depending on the size of your dish. Just try to use all layers evenly when assembling.
Add a layer of pastry cream on top of lady fingers, thinly as the banana will go between coffee cream layer. Place thinly sliced bananas on top of cream before covering with another layer of pastry cream. Another layer of lady fingers, pastry cream, banana's, then cover with the FIRST layer of whipped cream. Lady fingers, pastry cream, bananas, pastry cream. Last layer, lady fingers, pastry cream, bananas, whipped cream.
Top with chocolate powder, let sit for 4-24 hours before serving.
