My Cream of Spinach Soup Recipe is a delicious vegetarian soup that can be made in 30 minutes. This soup is flavorful and vegetable forward and can turn any creamed spinach hater into a believer.

I'm sure picky eaters, and reformed picky eaters for that matter, cringe at this recipe card. Why would any self respecting adult make cream of spinach on purpose? Well it's actually delicious, thats why.
I'm not just saying this because I created the Cream of Spinach Soup Recipe. I created the recipe out of love for this misunderstood green. As a kid I would not classify myself as a picky eater, but a mountain of green mush my mother pushed in front of me as Spinach? There was no way I was eating that. For years cream of spinach was my only expectation, didn't like to so I didn't eat it.
Eating cream of spinach on purpose really signified my shift into adulthood, sophistication if you will. I realized these vegetables and the thing I'd been avoiding were actually not just goof for you, but god in general. It's been years since I've turned my nose up at a dish for the simple fact of the color of the food. I encourage you to do the same, let this recipe surprise you.
How to Host: When To Serve Cream of Spinach Soup
As I said, this Cream of Spinach Soup recipe can be a divisive one. Guests may be offended, or more likely too afraid of offending you and suck the soup down without a thought. But where I think this recipe will really shine is at home, with the family. Maybe on a dark and snowy night, or when someone is sick. There is something about a big bowl of soup that is just so comforting.
Make this dish for your family, if they ask what's in it, you can say greens, potatoes, bu no beans.

Cream of Spinach Soup Recipe

Serves: 4-8 people
Cream of Spinach Soup is hearty, healthy and perfect for winter.
Ingredients for Cream of Spinach Soup
2 tbsp. Olive Oil
1 whole Onion, thinly sliced
1 tbsp. Garlic, minced
1 tsp. Salt & Pepper
2 tbsp. Butter
1 tbsp. Flour
2 whole Potatoes, peeled and diced
8 - 16 oz. Fresh Spinach
32 oz. (4 cups) Vegetable Broth
3/4 cup Whole Milk
1/4 cup Heavy Cream
Croutons (Optional)
1 cup of French Baguette, White Bread, or Italian Bread
1 - 2 tbsp. Olive Oil
2 tbsp. Parmesan Cheese
1 tsp. Garlic Powder
1 tsp. Red Pepper Flakes
1/2 tsp. Pepper

How to Make Cream of Spinach Soup
1) Make Croutons (Optional): tear your preferred bread into small pieces into a small bowl. In the bowl add olive oil, parmesan, garlic powder, red pepper flakes and black pepper. Toss to combine and then place on a tinfoil lined baking sheet. Bake on low 200 degrees in the oven until croutons are crisp (about 20 - 30 minutes).
2) Start the soup: In a large pot add olive oil and sliced onion. Turn on to medium heat and cook down onions for 5 minutes. While onions are cooking, chop the spinach. When onions are cooked down, slightly brown but not translucent, add the minced garlic, salt and pepper. Cook for another minute.
3) Cook the spinach: In the pot add the butter and flour, stir to combine so no clumps remain. Cook flour and brown for two minutes, this is creating a similar technique to a rue, this will prevent butter and cream from separating at the end. Add the chopped spinach and allow to wilt and cook down for 2 - 4 minutes. Pell and dice the potatoes while this is cooking.
4) Add the broth: When the spinach is wilted, add the vegetable broth as well as the potatoes. Bring the soup to a boil and then let simmer for 15-25 minutes. The potatoes should be soft when pierced with a fork.
5) Finish the soup: Once potatoes and spinach are cooked down, add the milk and heavy cream. Season to taste, if you are not making the croutons with the soup you can adjust spice and salt by adding red pepper flakes or more pepper.
6) Serve soup: serve soup hot with croutons on top. Soup can be frozen for up to 6 months in an air tight container.
