This mango pico & guacamole recipe is the perfect reinvention of classic chips and dip.

Mango Pico & Guacamole Recipe

Ingredients:
1 Avocado
1 Mango, diced
1 tsp. Garlic, minced
2 -3 tbsp. Fresh Cilantro, DIVIDED
1 Jalapeno, diced
1/4 cup Red Onion, diced
1 Tomato, diced
2 - 3 Limes, juiced and DIVIDED
1/2 tsp. Salt, DIVIDED
1/2 tsp. Pepper
1/4 tsp. Red Pepper Flakes
1/4 tsp. Chili Powder
1 bag Tortilla Chips

Directions:
1) Make guacamole: in a food processor add the ripe avocado, minced garlic, about 1 tbsp. of fresh cilantro, pepper, 1/4 tsp salt and the juice of 1 lime. Blend the guacamole until completely creamy. Set aside in bowl you intent to serve, a wider bowl will allow for the mango pico to sit more evenly on top.
2) Make mango pico: dice the mango into 1/2 - 1/4 inch pieces, dice jalapeño into small pieces as well as red onion and tomato. Then finely remaining cilantro. Add the fruit, vegetables and herbs to a small bowl and combine with the remaining 1/4 tsp salt, red pepper flakes, chili powder and juice of one lime. Taste the pico and adjust lime of salt if necessary.
3) Make mango pico & guacamole: Let the mango pico combine and sit for a few minutes, before scooping and setting on top of the guacamole. Serve with a side of tortilla chips.

If you don't like mango: you can use fresh peach for the burst of fruit. Or if you hate fruit and are looking for a simple pico, use this recipe without the mango.
Make ahead: you can make this dip up to two days in advance and store them separately in a tight container in the refrigerator.
