Blueberry Cheesecake Brunch Bars

My Blueberry Cheesecake Brunch Bars are the most perfect and delicious finish to a summer brunch. These blueberry cheesecake brunch bars are made with a cornflake crust and fresh blueberries. The recipe comes together quickly with minimal work on your part, the longest part of the recipe is waiting for it to cool. Make my blueberry cheesecake brunch bars for a delicious dessert for summer barbecues or a special treat.

Blueberry Cheesecake Brunch Bars 

Serves: 9-12  

Prep Time: 15 minutes  

Cook / Active Time: 70 minutes 

Assembly / Standing Time: 4 hour, chilling time 


Ingredients: 

Cheesecake Batter: 

¾ cup Fresh Blueberries 

8 oz. Cream Cheese, softened 

¼ cup of Sour Cream 

⅓ cup Brown Sugar 

1 Whole Egg

¼ cup Heavy Cream 

1 tsp. Salt 

1 tsp. Vanilla Extract 

Cornflake Crust: 

1 cups Cornflakes, toasted and divided 

3 tbsp. Flour 

½ tsp. Salt 

1 tsp. Cinnamon 

2 tbsp. Brown Sugar 

3 tbsp. Butter, melted

Directions for the Blueberry Cheesecake Brunch Bars:

  1. Make the cornflake crust: heat the oven to 350 degrees fahrenheit. On a small pan toast the 2 cups of cornflakes in the oven for 7 minutes. Take one half of the toasted corn flakes and crush them into fine pieces using a mortar and pestle, food processor or bag and wooden stick. Once cornflakes are ground add them to a small bowl with the other whole corn flakes. Add flour, salt, cinnamon, and sugar and mix, crushing and combining the whole cornflakes. Add melted butter and toss to combine, everything should be the same saturation level. 

  2. Bake the cornflake crust: in a 8 x 8 baking pan, pour the cornflakes crust and press down to all corners of the pan with your hand. Place into the 350 degree oven and bake for 10 minutes. 

  3. Make cheesecake batter: while the cornflakes crust in cooking, clean the bowl that you used and add the softened cream cheese and brown sugar. Using a rubber scraper, fold the sugar into the softened cream cheese and break up the cheese as best you can. Add sour cream and whole egg and whisk vigorously for 2 minutes. Batter should be smooth with menial clumps. Add heavy cream, salt and vanilla extract and heat for another minute. When the batter is smooth, fold in the blueberries, leaving a few aside to add on top. 

  4. Bake the cheesecake: take the cornflake crust from the oven and pour the cheesecake batter over the crust. Place the remaining blueberries over the top and place in the oven. Let the cheesecake bake for 45-55 minutes. The top will be slightly browned when done baking, make sure to turn the pan around half way through baking. Turn off the oven and allow the cheesecake to sit inside for 30 minutes before placing it on the counter. Allow another 30 minutes of cooling before refrigerating. Keep refrigerated for at least 3 hours before serving.
