Pumpkin Spiced Hummus Recipe
Serves: 4 - 8 people

Ingredients
1 15 - 20 oz. can of Chickpeas (also called Garbanzo Beans)
1/3 cup Pumpkin Puree
3 - 4 tbsp Extra Virgin Olive Oil
1 tsp. Garlic, minced
1/2 tsp. Fresh Ginger, minced (1/4 tsp. if using ground ginger)
2 tbsp. Maple Syrup
1/2 tsp. Paprika
1/2 tsp. Salt & Pepper
1/2 tsp. Chili Powder
1/2 tsp. Red Pepper Flakes
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
Optional for Dipping:
Pita Chips, Bagel Chips, Crackers, Toasted Bread

Directions
1) Roast the chickpeas: preheat your oven to 300 degrees. On a tinfoil lined baking sheet, pour the drained can of chickpeas onto the tinfoil, sprinkle the chickpeas with paprika, salt and pepper. Place in the oven and roast for ten minutes. Allow 5 minutes for cooling before blending.
2) Blend pumpkin spied hummus: in a food processor, or high powered blender, add the chickpeas and 2 tbsp. of olive oil to the blender. Blend until most of the chickpeas are blended, but they wont be completely smooth. Then add garlic, ginger, pumpkin puree, maple, chili powder, red pepper flakes, cinnamon and nutmeg. Blend for a minute and check the consistency, add remaining olive oil if you need the mixture to be more loose and creamy.
3) Serving the pumpkin spiced hummus: taste the hummus before removing from the food processor and adjust any seasoning levels to your taste, salt or spies. Add to serving ramekin and place a cinnamon stick (optional) to mimic a pumpkin stem. Serve pumpkin spiced hummus with your preferred pita chip or crackers.
