These Cinnamon Roll Pancakes are the best of breakfast fusions, fluffy pancakes and sugary sweet cinnamon rolls! The cinnamon roll pancakes can make any Sunday breakfast special, with a maple whip cream, this recipe has hints of cinnamon sweet cream. You can make this recipe in minutes and the cinnamon roll pancakes are so delicious you’ll have the recipe memorized  to make over and over.

Cinnamon Roll Pancakes Recipe 

Serves: 4 - 6  

Prep Time: 10 minutes  

Cook / Active Time: 20 minutes 

Assembly / Standing Time: 10

Ingredients: 

Cinnamon Roll Pancakes:

1 cup Pancake Mix (I used Krusteaz Light & Fluffy Buttermilk Pancake Brand Mix) 

1 Whole Egg

½ cup Milk 

¼ cup Sour Cream 

3 tbsp. Unsalted Butter, melted and hot 

½ tsp. Vanilla Extract

⅓ cup Brown Sugar 

1 tsp. Cinnamon, ground 

½ tsp. Salt

Maple Whipped Cream (Optional):

1 cup Heavy Whipping Cream, chilled 

½ tsp. Vanilla Extract 

1 tbsp. Maple Syrup

½ tsp. Cinnamon, ground 

¼ tsp. Salt


Directions: 

  1. Make pancake mix: in a medium bowl, combine the pancake mix, egg, milk and sour cream. Stir to combine until mixture is thick but will run off the whisk when picked up. If too thick, add more milk to thin the batter slightly. 

  2. Make the cinnamon butter: in a glass measuring cup, or something that can withstand heat, melt the butter, about 30 - 60 seconds. Whisk in brown sugar, vanilla extract, cinnamon and salt. Whisk until sugar is melted and viscous in the butter, about 1 -3 minutes. If butter cools down before sugar is completely melted in, pop in the microwave for 15 more seconds. Pour the combined sugar mixture into a piping bag, bottle or sandwich bag.    

  3. Make the whipped cream (optional, skip if desired): in a large bowl, or stand mixer add the heavy cream, vanilla extract, maple syrup, cinnamon and salt. Use a whisk, hand mixer or stand mixer to whip the cream. Depending on what process you use this will take anywhere from 3 - 10 minutes. Medium peaks is perfect for this recipe. 

  4. Cook the cinnamon roll pancakes: in a medium no stick pan, add a little vegetable oil or cooking spray and let heat on medium for two minutes. Use a ¼ cup to pour the batter into the pan and rubber scraper to spread out the pancake into a good circle. Take the piping bag with butter and insert the tip into the center of the pancake, only slightly so it sits in the batter but doesn't hit the hot part of the pan. In a spiral motion pipe the sugar until you reach the edge of the pancake. Cook the pancakes for 2 minutes, flip and cook for another 2 minutes. Remove from heat,  serve immediately. Pour a spiral of remaining sugar butter on top if desired, with whip cream and syrup.

Tips & Tricks for Cinnamon Roll Pancakes: 

If you don’t have a pre-made pancake mix:

  • You can make this simply at home, 1 cup Flour, 1 tsp Baking Soda, 3 tsp. White Sugar with the additional ingredients listed above.  

If you don’t like maple whipped cream: 

  • You can make a more classic icing for the pancake using ½ cup Confectioners Sugar and 1 -2 tbsp. of Milk. 

If you don’t have a piping bag or bottle: 

  • Use a plastic sandwich bag and cut a small ¼ inch hole in the bottom for piping.
