My French Toast Grilled Cheese is the best sandwich for brunch. It is all things delicious and indulgent. This recipe is actually inspired by my boyfriend, who cooked a similar sandwich for me a few months into our relationship. He was extremely nervous to cook for me, but I couldn't have loved something more. I’d never seen anyone use french toast as bread. I hope I do him justice with this recipe.

French Toast Grilled Cheese: The Best Brunch Sandwich Recipe
Serves: 3 - 6
Prep Time: 10 minutes
Cook / Active Time: 25 minutes
Assembly Time: 5 minutes
This recipe is meant for a group and can make three sandwiches. If you’re looking to have just French Toast Grilled Cheese: The Best Brunch Sandwich Recipe for yourself I would recommend cutting down the recipe by a third.
Ingredients:
French Toast:
6 slices of thick cut Bread (I used Brioche style), toasted
2 whole Eggs
¼ cup White Sugar
2 tsp. Cinnamon
1 tsp. Salt
2 tbsp. Maple Syrup
¼ cup Whole Milk
Whipped Ricotta Cream Cheese:
½ cup Ricotta Cheese
4 oz. Cream Cheese
5 tbsp. White Sugar
1 tbsp. Extra Virgin Olive Oil
½ Salt
½ Lemon, zested (optional)
Toppings:
1 can of Seedless Raspberry Jam (8 - 12 oz. Jar)
1 lb. of Bacon, diced

Directions:
Cook the bacon: dice the bacon into small ½ inch pieces. To a cold sauce pan, add the bacon and turn on the heat to medium. Let bacon cook until golden brown, 8-15 minutes. Once bacon is cooked, separate the bacon grease and put pieces aside for assembly.
Make whipped ricotta cream cheese: to a small bowl add ricotta, cream cheese, white sugar, extra virgin olive oil, salt and lemon zest. With a whisk, vigorously mix the cheese until everything is combined and the consistency is smooth and light in texture, about 2-4 minutes. Feel free to use a hand or a stand mixer if you don’t mind cleaning the dishes!
Prepare for assembly: make sure bacon pieces are in a bowl near the stove, for assembly. Put the whipped ricotta cream cheese into a piped bag and cut a ½ inch hole in the bottom. Add the seedless raspberry jam to another piping bag and cut a ¼ inch hole in the bottom. This will make it easier to spread onto the bread.
Make french toast: toast the slices of bread in a toaster until golden brown, this is important to the texture of the sandwich. In a shallow bowl combine the egg, white sugar, cinnamon, salt, maple syrup and whole milk. Whisk together until egg yolks are broken dn mixture is a creamy yellow texture. Sandwiches will be cooked one at a time.
Cook french toast: in a large non-stick pan, turn the stove on medium heat and add a thin layer of cooking oil to the pan. Dip the toasted bread into the egg mixture on both sides, but don’t let it sit as it will become too soggy. Add dipped bread to the hot pan and cook for 2-3 minutes on the first side.
Make the french toast grilled cheese: when the first side of the french toast is cooked, flip the bread and on one piece, pipe the whipped ricotta cream cheese, about 2 tbsp. Don’t put the cheese all the way to the edges, as it will melt a bit under the heat. To the other piece of bread spread the seedless raspberry jam. Add the crumbled bacon on top of the whipped ricotta cream cheese, about 2- 3 tbsp. Place the jam piece of bread on top to close the sandwich. Serve immediately.
Tips & Tricks
If you don’t have a toaster:
Turn your oven on low between 200-250 degrees and place bread on the pan to toast bread for 5-10 minutes.
If you don’t like raspberry jam:
Feel free to use a different jam, I am just particularly biased toward raspberry.
Make this dish vegetarian:
Feel free to omit the bacon and the sandwich is still a magnificent French Toast Grilled Cheese the best brunch sandwich
If you don’t like bacon:
Use ham or sausage, it is just as delicious!
