Maple Hot Sauce & Waffles: A New Brunch Recipe

This Maple Hot Sauce & Waffle recipe is one I am particularly proud of. This recipe is so fun and a new twist on some classic brunch recipes. Initially I was inspired by Eggs Benedict, which I know this recipe does not resemble but that is where I started. I was really attracted to the idea of having a waffle base with a stack on top. But the Maple Hot Sauce is definitely the star of this recipe however.
My Maple Hot Sauce & Waffles is a new brunch recipe that will have anyone you know excited and wanting more. This new brunch recipe with maple hot sauce uses a classic and accessible frozen waffle as a base for a delicious new brunch recipe. The maple hot sauce is sweet with a deep spiced undercurrent. Maple Hot Sauce & Waffles: A New Brunch Recipe is a great recipe for a weekend brunch.
Maple Hot Sauce & Waffles: A New Brunch Recipe
Serves: 6
Prep Time: 10 minutes
Cook / Active Time: 20 minutes
Assembly Time: 5 minutes
This recipe is meant for a group and can make six waffles. If you’re looking to have just Maple Hot Sauce & Waffles: A New Brunch Recipe for yourself I would recommend cutting down the recipe by a third.

Ingredients:
1 box of Frozen Waffles, of your choice (I used Eggo Belgian Thick & Fluffy)
6 - 8 oz. Sliced Ham, of your choice (I used Blackbear Hickory Smoked Maple Ham that was pre-packaged)
6 - 8 oz. Sliced Cheese, optional and of your choice (I used Blackbear Muenster Cheese that was pre-packaged)
6 whole Eggs
Maple Hot Sauce:
¼ cup of Hot Sauce, of your choice (I used Original Cholula Hot Sauce)
½ cup of Maple Syrup
1 tsp. Red Pepper Flakes
½ tsp. Salt
½ tsp. Paprika
Directions:
Make the maple hot sauce: in a liquid measuring cup add the ¼ cup hot sauce and ½ cup of maple syrup, red pepper flakes, salt and paprika. Stir to combine and set aside. Taste can be adjusted as necessary, if you want to make it spicier simply add more hot sauce and spices. If the sauce is too hot, add more maple syrup or consider leaving out the red pepper and paprika. See more trips and tricks below!
Cook the ham: in a medium sized pan over medium heat, cook the slices of ham until lightly browned and crispy, about 1-2 minutes per side. If ham is thicker than a ¼ of an inch, cook longer on each side. Do not wipe the pan after this step, as we will use the grease from ham to cook the eggs.
Toast the waffle: using a toaster, toast the frozen waffles as directed on the box. The next steps come together quickly, I recommend putting the waffles on the serving dish or individual plates. Add the cheese on top of the waffle, if desired. Then layer one to two slices of cooked ham.
Cook the egg: Over easy is my preferred style of egg for this recipe. Using the same pan you cooked the ham in over medium heat, crack each egg individually and cook. An over-easy egg have the cooked whites, while the yolk remains runny. Fry the egg on the first side for 3 - 4 minutes before flipping, the second side will cook for 2 minutes or until you are able to lift the egg off the pan without fear of breaking the yolk.
Assemble: Put the hot over easy egg from the pan directly on top of the waffle and ham. Top with Maple Hot Sauce and serve immediately.

Tips & Tricks for Maple Hot Sauce & Waffles: A New Brunch Recipe
You hate frozen waffles:
Feel free to make homemade waffles! This recipe is part of a brunch series, in where I want to provide the most accessible options for people to host their friends for a meal. If you hate the idea of using frozen you can certainly make them fresh yourself.
You can use frozen pancakes, the maple hot sauce will still be delicious.
You don’t own a toaster:
Turn your oven on low between 200-250 degrees and place bread on the pan to toast waffles for 3-7 minutes.
You don’t like ham:
Bacon would also be great with the Maple Hot Sauce
You don’t have maple syrup:
If you can’t find or don’t want to buy maple syrup, you can use a regular breakfast syrup, but start with adding only 2 tbsp of Hot Sauce. Regular syrup contains water, which can make the sauce spicier is not using maple, so start with less and add more hot sauce as you taste.
