This Strawberry Ricotta Toast is perfect for a light summer brunch. Avocado toast has been reigning supreme for too long, but there is a new toast in town. The Strawberry Ricotta Toast will be the new avocado toast the minute you try it. 


With a smooth whipped ricotta cheese and fresh strawberries, this toast is perfect and light for brunch. Plus the Strawberry Ricotta Toast is so much more sophisticated than avocado toast and comes together just as quickly.

Strawberry Ricotta Toast: The New Avocado Toast Recipe 

Serves: 4 - 6

Prep Time: 15 minutes  

Cook / Active Time: 5 minutes 

Assembly Time: 5 minutes


Note: This recipe is meant for a group and can serve 4- 6 slices of toast with topping. If you’re looking to have Strawberry Ricotta Toast, the new avocado toast just for yourself, I would recommend cutting down the recipe by a third. Using a pinch of salt instead of a real measurement.

Fresh Strawberries, Whipped Ricotta Cheese, Toast

Ingredients: 

4 - 6 slices of Bread (I used Brioche style) 

Whipped Ricotta: 

1 cup Ricotta Cheese 

4 tbsp. White Sugar 

½ tsp. Salt 

2 tbsp. Extra Virgin Olive Oil 

1 tsp. Lemon Zest (half the lemon)

Strawberries: 

1 cup Fresh Strawberries (6-9 berries), diced 

1 tbsp. Honey 

½ Lemon, Juiced 

½ tsp. Salt

5 - 10 Fresh Mint Leaves (optional), torn 


Directions: 

  1. Make the whipped ricotta: In a small bowl add the ricotta, white sugar, extra virgin olive oil, lemon zest and salt to the bowl. With a whisk, vigorously mix the cheese until everything is combined and the consistency is smooth and light in texture, about 2-4 minutes. Feel free to use a hand or a stand mixer if you don’t mind cleaning the dishes!

  2. Make the strawberries: dice the fresh strawberries into small cubes, pieces should be about ½ inch. thick. Add diced strawberries into a small bowl and add the honey, lemon juice and salt. Stir to combine. Rinse the fresh mint sprigs and tear into small pieces and mix into strawberries. 

  3. Make the toast: toast the bread until it is golden brown. Spread 2 - 3 tbsp of the whipped ricotta cheese on the bread. Then top with 2 - 3 tbsp. of strawberries on top of toast and cheese. Serve immediately or bread will become soggy. 

        

Tips & Tricks 

Can you make the whipped ricotta and strawberries ahead of time?

  • Absolutely! You can make the topping ahead of time and toast the bread when ready to serve. 

  • Keep the ricotta and strawberries refrigerated if you don’t plan on using them within two hours of making them.   

You don’t like Ricotta Cheese: 

  • You can use cream cheese as an alternative, but it will be a bit heavier. I would recommend holding off on the salt until the end to see how it tastes.

You don’t like Strawberries: 

  • Don’t worry, use a different berry! Blueberries, raspberries or blackberries would be wonderful with this recipe. 

  • You could also use mango, peaches or even tomatoes! Let me know down in the comments if you try any of these alternatives.  

If you don't have a toaster:

  • Turn your oven on low between 200-250 degrees and place bread on the pan to taost bread for 5-10 minutes.
