Whipped Goat Cheese & Bacon Dip Recipe

It's not summer without a new appetizer to obsess over and this whipped goat cheese & bacon dip is the perfect recipe. With creamy tangy goat cheese paired with subtle and salty ricotta cheese, it creates a perfect balance with the crispy candied bacon. The recipe is then slathered with sweet raspberry jam to perfectly pop in this savory dish. Pair this appetizer dip with pita chips, bread or pretzels. This whipped goat cheese and bacon dip is perfect to pair with a glass of wine or a classy cocktail.

Whipped Goat Cheese & Bacon Dip Recipe

Serves: 4 - 8 people

Prep Time: 10 minutes

Active Time: 15 minutes


Ingredients

3 - 4 oz. Plain Goat Cheese

1/4 - 1/3 cup of Whole Milk Ricotta Cheese

1 - 2 tbsp. Olive Oil

8 - 10 oz. Bacon, diced into 1/2 inch pieces

1/4 tsp. Red Pepper Flakes

1/2 tsp. Black Pepper

1/4 cup Brown Sugar

1/3 cup Seedless Raspberry Jam

Optional: Pita Chips, Bread, Flat Pretzels, Crackers, Cucumbers

Directions

1) Whip the goat cheese: in a food processor add the goat cheese, 1/4 cup ricotta and 1 tbsp. olive oil. Whip for 1 - 3 minutes until cheese is creamy and light in texture. If you are having trouble whipping cheese together, add more olive oil. If the whipped cheese is too tangy for your taste, or trying to make it go farther, you can add about 2 tbsp. of ricotta cheese.

2) Candy the bacon: in an aluminum pan, add the diced bacon and turn on to medium heat. Allow bacon to cook and crisp, about 7 - 10 minutes. Then add the red pepper flakes, black pepper and brown sugar. Stir constantly so sugar doesn't burn and dissolves into the bacon, about 3 more minutes. Take off the heat when bacon is crispy and browned.

3) Assemble whipped goat cheese and bacon dip: in a medium bowl or plate add the whipped goat cheese, add the raspberry jam in sporadic scoops with a spoon. then add the candied bacon on top, the heat will melt the jam slightly perfectly. NOTE: I don't usually add all the bacon at the same time as it scoops up easily and will add more as we coninue to eat the dip.
